I am making one of my favorite Betty Feezor recipes that will put NO HEAT in your kitchen called Italian No Bake Cake. 🍰 And I’m using fresh eggs from my very own chickens 🐓 and those tasty little Ladyfingers too. But for the life of me, I still don’t understand WHY you can only find these fingers in the produce section!

Betty Feezor’s Italian No Bake Cake Recipe

★ INGREDIENTS ★

8 Ladyfingers
2 eggs
1 cup Dixie Crystals confectioners powdered sugar
1-1/2 sticks of softened butter
½ cup unsweetened cocoa powder
A splash of lemon extract
1 box of vanilla wafers, crushed
Cool Whip

★ DIRECTIONS ★

Cut the ladyfingers in half and place them upright, on the inside edge of the cake pan.
Add eggs, softened butter, and powdered sugar into a large mixing bowl and whisk gently.
Add in the cocoa powder and lemon extract. Whisking again until there are little to no clumps.
In a Ziplock bag, crush the wafers using your hands or a meat tenderizer.
Add crushed wafers into the bowl with the remaining ingredients and stir.
Pour the batter into the cake pan, in the middle of the ladyfingers. Then, place into the fridge until completely chilled.
After it chills, remove from fridge and top with cool whip.
