Pride of the South Pimento Cheese

Welcome back friends to #MyKitchenMyRules!  

Whether it’s on sandwiches or a good ole’ fashioned burger, there’s nothing that beats the taste of my tangy, creamy Pimento Cheese. You can make a huge batch in minutes, then pack into food-grade storage containers and refrigerate until ready to enjoy. I add my signature ingredient, Duke’s mayo to give my pimento cheese that extra zippity doo-dah.

Known as the 'pâté of the South’, Pimento Cheese is really not a Southern thing and in fact, it originated in New York!

★ INGREDIENTS ★

• 2 jars sliced pimentos
• 1 cup Duke's mayonnaise
• 2 16 oz blocks cream cheese
• 2 lbs shredded cheddar cheese

★ DIRECTIONS ★

1. Start by adding 1 jar of sliced pimentos into a food processor; followed by mayonnaise, cream cheese, and half of the shredded cheese. Blend until well combined.
2. Add in the rest of the shredded cheese and the second jar of sliced pimentos and blend again.
3. Use a spatula to scrape the sides if needed. Enjoy.

★ TIPS ★

1. Spread generously on your favorite bread – Merita® old fashioned white is the fave in MyKitchen! Toasted, if desired.
2. Pimento cheese also makes a great hamburger topping as an alternative to a slice of melted cheese.
